One of my favourite things to bake is Millionaire’s Shortbread.
I use a BBC Food recipe (http://www.bbc.co.uk/food/recipes/millionaires_shortbread_76712) which always works out really well. I have been trying to work on my own recipe for this because with all the layers, it’s easy to mix things up! I’ve been thinking about doing a flapjack base instead of shortbread, and possibly doing white chocolate on the top instead of milk. But who knows!
Anyway, I decided to make some the other day. I’ve always made it in a 9” square tin as the recipe suggests, but I wanted to find an easier and neater way to make them. I decided to use my Lakeland mini sandwich tray to trial one of them in, which resulted in a small round shortbread that I really liked the look of! The best part about this is not needing to cut them into squares, which I’m pretty useless at so they always crack and crumble, oops! So I will definitely be making them in the individual mini tins in the future.
